Super simple chicken curry – Allergy and Slimming World friendly

When the day has turned into chaos it’s so easy to grab a takeaway menu or pop to the chip shop (especially when you live next door to one). I have a couple of go to quick and easy to cook dishes. Inspired by the chicken korma from the ‘curry club’ Slimming World cookbook, we will probably have this dinner once a week!

As I’ve stated before I have to try and cook meals that suit various dietary requirements. This one is Slimming world friendly (syn free) and allergy friendly (dairy, egg, nuts, soya). Vinnie devours it, Frankie will eat the chicken if I ‘take off’ the sauce and we find it really tasty.

I add extra passata as Mike likes a curry with more sauce and you could also add veg to the curry or use a different protein to suit any other dietary requirements or preferences. I add veg to serve just to add a bit of texture. And a poppadom to make it feel like a treat (syn the poppadom for SW).

I also always have microwave rice in my cupboard for those really quick meal fixes. You can get so many different varieties it’s always handy to have a couple stashed away!

I hope you enjoy it. Mild, easy, quick and tasty. You feel full but not over like you’ve indulged from a takeaway curry.
